The Wine
Vulcaia and Vulcaia Fumé were the first wines produced in 1991. Our idea was to show the potential of the Soave Classico area, not yet with its classic wine, but with a new interpretation of the Sauvignon that, grown for the first time on its volcanic soil, gave a completely new and different version from the French variety.
Vines “domesticated” by the territory, with aromas and notes which are different from the typical varietal notes.
THE TERRITORY, WITH ITS CHARACTERISTICS, PREVAILS ON THE VARIETY AND NOT VICE VERSA.

Oysters, clams and conch; omelette with asparagus.
With local tradition dishes: eggs and asparagus, rabbit cooked in a baking pan with zest.
