Impressions
It opens fresh, mineral, deep, with fragrant field flower notes (camomile, elderflower, iris).
On the palate is rich, complex and multilayered with an almond finish.
With the passing of time, these notes transform into even more complex aromas of pollens and dried flowers.
The Wine
Foscarino is our interpretation of the Soave Classico that looks back to ancient times. It recalls ancestral traditions in order to revive forgotten aromas.

Vineyards are located in the Monte Foscarino: basaltic-volcanic soil and south-east exposure of the vines.
Characteristics
Garganega: this variety was introduced in the Classic area 2,000 years ago by the Romans.
Fermentation takes place in used barriques, large barrels and steel tanks. Prior to racking, batonnage is carried out every 6 weeks for about 6 months. Fining for 6 months in stainless steel vats.
Great ageing potential until 10-15 years.
Pairings
It matches well with vitello tonnato (veal with tuna sauce),
risotto with fish, sushi.
With local tradition dishes: baccalà alla vicentina with polenta, fish soups
With vegetables: velvet pumpkin soup, velvet peas soup, risotto ai bruscandoli (sprout hops) and Monte Veronese cheese, cous cous with vegetables.
